What is your favorite color? I always have a hard time picking because I have too many favorites. Growing up, I loved purple, I wore purple everything and even convinced my dad to paint my room a dark purple color. Green is a given because of the peas, it is our signature color. I also like black. My wardrobe is mostly black, you can’t go wrong with a classic. I am currently loving navy though. I also love pastels and bright colors. See, I can’t make up my mind. Bring on all of the colors!

To celebrate my love of color, I made a Rainbow Vegetable Sandwich that has ALL of the colors. This sandwich is healthy, delicious, and SO fun!

I like all vegetables, just like I like all colors, so I decided to layer lots and lots of colorful veggies to create the ultimate veggie sandwich.

I lined up my veggies by color and layered them on my sandwich. I used arugula, cucumber, avocado, sprouts, yellow pepper, carrot sticks, red peppers, tomatoes, radishes, red onion, and purple cabbage.

Feel free to use your favorite veggies, there are lots of colorful options out there! This is a great back to school sandwich and a great way to get your kids to eat their veggies. Have them help you assemble and design their own rainbow of a sandwich. Any variation of this is great for a school lunch!

To give the sandwich a flavor boost, I spread Arla Herbs & Spices cream cheese on the bread. The cream cheese has a fresh taste with tones of pepper and paprika. It goes great with veggies! I also like it because it is made exclusively from natural ingredients and no preservatives, additives or added colors. I like color, but not added colors in my foods:)

Rainbow Vegetable Sandwich

Ingredients
  

  • 2 slices bread
  • 2 tablespoons Arla Herbs & Spices cream cheese
  • 1/4 cup arugula
  • 6 cucumber slices
  • 1/4 cup alfalfa sprouts
  • 1/2 avocado pit removed and sliced
  • 5 yellow bell pepper strips
  • 3 tablespoonsย  shredded carrots
  • 5 red bell pepper strips
  • 2 to mato slices
  • 2 radishes sliced
  • 3 tablespoons finely chopped purple cabbage

Instructions
 

  • Spread the cream cheese on each slice of bread. Take one slice of the bread and layer the veggies, starting with the arugula and ending with the purple cabbage. Place the other piece of bread on top, cream cheese side down, and gently press the sandwich together. It will be a mighty sandwich. Grab a napkin and enjoy immediately.

  2. Hey girl this looks so good! I like a lot of different colors to! My sister and I had our room painted light purple years ago! We always shared a room growing up!

  3. I have to ask do you sprout your own alfalfa sprouts? I haven’t been able to find any for the last few years after a salmonella scare with them. I love these and thought they would be back in produce sections by now.
    The sandwiches look amazing

    1. I didn’t use red onion, it’s cabbage in the picture. Red onion would be good though. Feel free to add it!

  4. I love making sandwiches like this, but I have a terrible time keeping them in one piece as I eat them! The veggies tend to be quite slippery. Do anybody have a fix for this?

  5. Hi any suggestions for a non dairy spread Instead of cream cheese and also for a good whole wheat or multi grain bread? All the ones I buy are gross….
